Each year, Daisy Cutter In Bloom gives us a chance to gather around the beer that helped shape Half Acre and let it branch into something new. Daisy Cutter has always carried a certain kind of Chicago energy: bright, expressive, familiar without becoming ordinary, built for the people who know it by heart and the people just finding their way into it. It’s a beer with roots, but every year we look for a new way to let those roots push up through the season.

For this year’s In Bloom celebration, we’re joined by our friends at Allagash Brewing for Daisy Cutter Crown, a collaboration IPA brewed with 100% Maine-grown wheat. Allagash is one of those breweries that changes the way you understand beer. Their work is grounded in place, quality, culture, and hospitality, and Allagash White sits high on the mountain of all-time great beers: singular, welcoming, endlessly drinkable, and unmistakably its own. With Daisy Cutter Crown, we wanted to carry some of that spirit into the Daisy Cutter family without losing the core of what makes Daisy Cutter feel like Daisy Cutter.
Daisy Cutter Crown is our shared expression of that idea: an IPA with soft bready wheat character from Allagash’s Maine-grown wheat, clean structure, bright citrus, orange glow, and the kind of hop expression that feels alive in the glass without drifting too far from the pale ale roots that brought us here. It’s not a remake of Daisy Cutter, and it’s not trying to be Allagash White. It’s a crown placed somewhere between the two: a new seasonal branch from an old tree, shaped by friendship, wheat, hops, and a mutual love for beers that welcome you back again and again.

Alongside Daisy Cutter Crown, we’re releasing Double Daisy Cutter Evergreen, an 8% Double Pale Ale variant made in true Double Daisy form. If Daisy Cutter Crown opens the door to collaboration, Evergreen walks straight toward the mountains. Clear, bold, pine-forward, and brawny, it brings a more direct line to the West Coast side of American hoppy beer: Simcoe-driven evergreen aromatics, classic hop bitterness, soft citrus on the edges, and enough malt presence to carry the whole thing with purpose. It’s a Double Daisy for the people who like their hop character sharp, familiar, and pointed toward the tree line.
Together with classic Daisy Cutter, these three beers form the center of Daisy Cutter In Bloom this year: the original, the crown, and the evergreen. One beer that started the path, one beer that reimagines it through collaboration, and one beer that stretches it into a taller, louder, more resinous shape. It’s a small seasonal constellation inside the Daisy Cutter family, made for the moment when Chicago starts opening back up, when patios fill, trees shade long tables, and the year begins sending everyone down new branches.

We’ll be celebrating the full Daisy Cutter In Bloom moment at Balmoral on Saturday, June 13 from 2 to 10pm with Allagash beers, Half Acre releases, limited merch, DJs, flash tattoos, a photo booth, coffee, games, kids’ crafts, lobster rolls, lobster fries, s’mores, flower crown making, camp games, and a few Maine-minded surprises across the brewery.
