C Change and Cuda

We've been dipping into the German waters and pulling out the icy idolatry that is Kölsch beer. Kölsch beers exist in the Middle-earth of yeast's single-celled utopia. The reckless child of an ale & lager union, few things luge down your throat with the crisp ease of a Kölsch. We've pushed out two different examples to humble your t-buds.

Option #1: C Change

This more traditional example will hit up the Kölsch hot spots you know and love. Straw colored, session liquid pulled from the bowels of our Cologne right here on Lincoln Ave. 

Option #2: Cuda

Cuda tramples traditional ideas on German brewing. Dry hopped with Mosaic and thwarting the shackles of style, this German pale ale will urge you into its corner and caress your needs.

Chicago Craft Beer Week

Thirsty & Committed Citizens of Chicago:

The beer is cresting and about to break all over Chicago, for this is Craft Beer Week: May 16th - 26th, 2013. We're paddling into the approaching set and pleased with how we're poised to ride it out.

A week dedicated to beer forces us to consider how we want to celebrate. A brewery is rooted in celebration, in communion and ritual. We brew beer for a living, and while our role is to offer you beer, the larger task is to supply you with a rich element in a much larger existence. As individuals, we came to know beer as something that was appreciated while exploring the greater expanse. You touch glasses, acknowledge the beer and let it guide you towards your conquests.

We're surveying what the approaching days mean and we're honoring the essential truth: The beer means little without your ability to take it on a good ride. Search out the fierce beers, but remember to be fierce yourself. Toss back the big beers, but remember to be as big as your beer.

We've brewed a couple beers to take along on your travels:

Galactic Double Daisy Cutter -- we've ushered this goon out a number of other times. Galaxy hops brought out in force and draped over the frame of Double Daisy Cutter, the chunkier version of the original Daisy Cutter, which lives and breathes all over this city.

Navaja Double India Pale Ale -- This is the first time we've brought this out of its scabbard. We've never released a Double IPA - and this will make its debut at our 5th Anniversary Party on 5/17. Attacking your ability to make good choices, this bully quickly becomes your best friend.

We see a lot of things out there about moving beyond the IPA and folks shirking hop forward beer in pursuit of something more elegant, something never done, maybe an unknown spice that's escaped brewers thus far. And while all these things are great and conversations about whether or not your palette can pick up that hint of Urfa Biber are fine and good, we're going to belly up to the hoppiest bucket of nuts you can offer each and every time.

So, this is for you Chicago. We live and drink beer in a badass city, let's suck it up.

Stargrazer

Outer space is deep, man. Real deep. All sorts of mysterious, other-worldly, indescribable stuff happens out there. When you break it down and really think about it, we're all part of this space idea as well. I mean, do you realize we're floating in space? And who's to say what else is out there? (well, besides scientists and astronomers and all those smarty-pants type folk... they do a pretty good job) Among the information that we do know is the concept of these ultra-high gravity black holes that eat stars. They just cruise around, light years away, and epicly consume stars and photons of light with a voracious appetite. These black holes are sometimes referred to as stargrazers. 

Unrelated but still totally awesome, we named a beer of ours Stargrazer. Stargrazer is a crisp lager, lightly hopped with modern American hops. Stargrazer drinks clean, dry and refreshing, making for an all-around rewarding experience. Embrace the cosmos, we're launching Stargrazer at the brewery on Friday.

The Grotto

The Grotto is an Extra Pale Ale that is light in color but high on crushability. The Grotto is your mystic cave of sessionable waters. We pulled inspiration for The Grotto from pale ales of yore - a simple malt bill consisting of 2-Row & Munich, topped off with Centennial and Cascade hops.
